Cachapa made from 2 fresh corn cut off curnerls. Blend together with 4 tablespoons corn meal,4 tablespoons flour , 2 teaspoon sugar, 1 teaspoon salt , I egg and blend with about 1 cup or little more to make thick like when you are making pan cakes . In non stick skillet add 1 tablespoon olive oil pour enough batter to cover pan cook on medium to low heat when cook through about 2 to 3 min . Add cheese alone or Spinach leaves and flip into half . When cheese is melted . Put onto dish and cook the rest or you can put mixture into container and leave in the fridge for another day . I learn to make this from Venezuela.
